SWEETS

CHEESECAKE FROYO

Used a few tablespoons of fat free cheesecake pudding mix made with 1/2 cup of almond milk and frozen for about an hour.. later added some PB2 on top!

SWEET TATER IN A JAR!

The NEW OIAJ! okay, not really, you know how much they hold a place in my heart

How to do this? Very simple!! Mash up a sweet tater in an ALMOST empty PB jar or AB jar (ALMOST empty.. NOT EMPTY!!!) , add cinnamon, butta, maple syrup, a dollup of greek yogurt and you got yourself a dang good snack

SMOOTHIE IN A JAR

SIAJ! smoothie in a jar!! 1 scoop chocolate protein powder, 1/2 cup almond milk, ice, cottage cheese (makes it thicker!), frozen strawberries, cookie bites on top!

Pumpkin Protein Crepes w. Cheddar Cheese & Strawberry Jam

1/4 cup pumpkin

1/4 cup egg beaters

truvia

cinnamon +pumpkin pie spice

*Mix together, pour a little bit onto a microwavable plate until its thin and flat, then microwave for about 2-3 minutes (until it gets crepe like) .. it will make about 4 small crepes

top with SHARP cheddar, strawberry jam, a little salt,  roll up & EAT!

Protein Parfait!

LAYER 1- Cottage Cheese, Greek Yogurt, Protein Cookie Dough
LAYER 2- Frozen Strawberries, Almond Butta, Honey

SWEET OMELET

Sweet Omelets with 1/2 cup egg beatas cooked in pan (flat), added swiss laughing cow, white chocolate wonderful peanut butter, vanilla extract, truvia, cinnamon..then fold!

Mint Chocolate Vita top, Peppermint ice cream, & Godiva Chocolate syrup

SWEET TATER SNACK

-Roasted some sweet taters in cube form with a lil butter, cinna+sugar (cut in cubes and bake at 400 degrees for about 20 minutes)

-mixed in some chobani

-topped with maple syrup and cinnamon

KEFIR PARFAIT

KEFIR parfait!!! 1 cup kefir, 1/2 cup fage, 1 protein cake, banana extract, 1 tbsp walnuts

SWEET TATER WRAP

1 Josephs lavash with swiss laughing cow, sweet tater (mashed), butter, cinnamon, sugar..ALL grilled on pan or panini press..heaven in mi boca!


-”dippage” for skins (yes i <3 the skins and i eat them!) with cottage cheese, more mashed sweet tater, cinnamon, sugar, vanilla extract

DELISH MAPLE PB PROTEIN BARS

I got the idea from http://www.dashingdish.com/2010/06/peanut-butter-maple-protein-bars/ .. SHE ROCKS.. so creative! But I tweaked the recipe a lil!

Perfect w. a side of greek yogurt!

-used 1/2 cup egg beaters already cooked

-used 8oz firm tofu and 8 oz greek yogurt

-used 1/2 cup PB and 1/4 cup PB2

-added in 1/4 cup  sugar free vanilla syrup

So this is HER recipe, I just changed it up a TAD.. and THEY ARE AWESOME! around 15 grams of protein per bar! So thick and I love them!

SAVORY

CARROT FRIES

Served alongside w. brussels, & a chicken/sausage/laughing cow scramble


  • 3-4 large carrots, cut up very thin
  • a drizzle of olive oil
  • distilled white vinegar
  • garlic salt
  • ALL put in paper baggie and shaken up
  • baked for 20-30 minutes, until crispy
  • DIP IN HUMMUS (HIGHLY RECOMMENDED) or mustard or ketchup or whateva!

Feta & Spinach Sausage Fritatta


-1 feta and spinach sausage

-2 garlic and herb laughing cows

-broccoli

-spinach

-1/2 cup of beatas & 1 egg

-hot sauce, salt, peppa, garlic powda

all broiled for about 10 minutes! DELISH.

Pepperoni Fritatta

! I made a fritatta with eggs+egg whites, maters, organic ham, gouda cheese, laughing cow AND pizza w. smart life pepperonis, laughing cow, naner peppers (Used same method as above)

Bacon Tuna Salad

-1 packet of white tuna

-3 pieces turkey bacon

-laughing cow and hummus

-paprika, salt n peppa, garlic powder, hot sauce

ALL mixed up and topped with hot sauce.. delish!

Katie’s Mini Bacon & Cheese Fritattas

- Spray cupcake tins with olive oil spray or olive oil or PAM spray

-layer tins with whatever veggies you want (I used spinach and onions!)

-add 3 pieces of crumbled up turkey bacon distributed in tins

-add crumbled laughing cow, cheddar cheese, feta, or whatever cheese you want!

-add seasonings: ex: garlic powder, salt, pepper, oregano

-add sauces: i used hot sauce for a spicy kick!

-add egg beater+egg mixture (I used one egg and about 1/2 cup egg beaters)

-Bake in oven on 375 for about 10-15 min! they will puff up .. then dip in ketchup , mustard, whatever!

Katies Egg Salad

-1 egg

-1/2 cup egg beaters

-3 slices turkey bacon

-1/4 cup greek yogurt

-hot sauce

-garlic powder, chipolte seasoning, salt, pepper, chili powder

ALL mixed and on top of spinach!

Mexican Lavish Pizza

Do yall remember eating those mexican pizzas in elementary school?! I do! I used to LOVE them! I found these Smart Life beef crumbles the other day, and thought…why not create them!? All you need is

-Josephs Lavash Wrap

-Beef crumbles (of any sort)

-Cheddar Cheese (or whatever you like)

-Mrs Dashs Fiesta lime blend

-HOT SAUCE

I put the wrap in the oven for a little bit at 400 degrees, mixed the beef crumbles with the seasoning blend+hotsauce, put the crumbles on the wrap, added cheese.. and baked for about 5 more min until the cheese melted.. THIS IS DELISH!! Also, use greek yogurt for dippage!!

Homemade Healthy Nachos

“Nachos” w. toasted home made pita chips (see recipe) , grilled chicken, greek yogurt, salsa, cheddar cheese, hummus, avocado and broiled until the cheese melts!

Eggs in a Pita Basket

Just cut a hole in the pita and cracked an egg in the hole and flipped! Then top with whatever, I put cheddar, tomatoes, and mustard and salt and pepper!

Lettuce Wraps w. Peanut Sauce

I had a MAD craving for PF changs lettuce wraps the other night.. and we have NO PF changs near me! So I decided to put my thinking cap on..


-3 pieces of grilled chicken sautéed in soy sauce and sesame oil (or tempeh!! .. i put a little bit of both!)

-sautéed onions and water chestnuts in soy sauce

-2 scrambled eggs chopped up

-any kind of noodles.. I am trying to get rid of my tofu ones so i used those

-put ALL in a pan with vinegar, a lil sesame oil, a lil soy sauce


Peanut Sauce!!

-2 tablespoons of any kind of PB (obviously salty) or PB2

-A little ketchup

-Red wine vinegar

-water

Mix up!!

Put together with some lettuce cups and ENJOY! Also pair with a CARB, I had Oats and SUNFLOWER SEED butter for dessert! This meal ROCKED!!

Veggie Burger Calzone

I had some wraps I wanted to be creative with so I decided to make a calzone!!


-1 Morningstar tomato and basil veggie burger

-1 scoop pizza sauce ( i dont like a lot )

-spinach, banana peppers

-laughing cow or whatever cheese

-oregano and hot sauce

I put it all in the wrap and then baked it in my oven at 400 degrees for about 10 minutes! DELISH!

DELISH Sweet tater salad

Salad with grilled chicken, sauteed sweet tater, roasted green beans (side), hummus, mustard, franks hot sauce!

Katie’s Pesto

1 box of basil (haha i know this doesn’t help..it was like, a big handful?)

2 tbsp walnuts

1 tbsp EVOO

3 tbsp chicken broth

2 tsp shredded parmesan cheese

Garlic Powder, Salt, and Pepper

ALL mixed in the handy dandy FOOD PROCESSOR!

It didnt make much..only like 4 servings.. because it was a test!

I enjoyed it on top of a flatbread with spinach and maters on top! (it would be GREAT with some feta cheese on there too)

OATMEAL

Chocolate Coffee Oats

1/2 cup of oats, 1 tbsp dark chocolate cocoa powder, 1/2 cup of almond milk, 1/2 cup of PB cup coffee, 1/2 cup water, 1/4 cup of egg whites ALL IN BLENDER, then microwaved, topped with Natural Jiff PB! (tastes like the real thang!)

Savory Egg Oats

Savory oats with egg whites, hot sauce, ranch seasoning, salt+pepper, layer of hummus on top, and 1 fried egg!

Chocolate Protein Oats

chocolate oats w. 1/2 cup of almond milk, 1/4 cup of egg beatas, 1/2 cup of water, cocoa powda, truvia, butta, and BARNEY BUTTER (which is on it’s last leg..so sad!)

SWAMP OATS


* Many of you have asked how I make these lovely green oats.. well i put 1/2 cup of oats, 1/2 cup of almond milk, 1 cup of water, and a big ole handful of spinach ALL in the blender and blend that sucker up! then microwave it for about 1 1/2 min, stir, then about another min or two.. Then add cinnamon, truvia, butter, whatever you like! and obviously PB or AB on top

Butterscotch Oatbran


Last night I mixed 1/3 cup of oatbran (is that the usual serving size for yall? that’s what it said on the box!) with vanilla soymilk and water, pumpkin, cinn+truvia, PB2, Pumpkin PB,vanilla yogurt and butterscotch chips!

Ultimate Dessert Oats

ULTIMATE OATS- Swiss laughing cow, cinnamon, almond butter, vanilla yogurt, jelly, almond milk!

REESES VANILLA OATS

In the mix..1/2 cup of oats

1 cup vaniller almond milk

1/2 cup water

2 tbsp coca powda

1 vanilla dannon yogurt

1 mondo scoop of Skippy natural PB

dollup of butta

CREAMIEST OATS EVER


-1/2 cup of oats

-1/2 cup of almond milk

-1 cup water

-1/4 cup of egg beaters

-1/4 tsp cream of tar tar

(ALL PUT IN THE BLENDER)

THEN microwaved for about 3 minutes (stirring in between)

THEN ADDED

-1/3 cup of pumpkin

-truvia, cinnamon, butter, pumpkin pie spice, banana extract

-white chocolate wonderful!

    your recipes are all so great! you should know that the mini frittatas have become a weekly staple for my boyfriend and i. he requests them all the time! and there are so many fun variations to try…i even made sweet dessert versions once.
